Pastry Profiles is in the process of planning our next pastry chef interviews. In the past we have been lucky to gain access to some great pastry chefs who are willing to share philosophies and techniques. Our upcoming interviews will be no less exciting. stay tuned for more info on those interviews. On a personal note I will be attending a class on entremets with MOF Olivier Bajard at the Pre Gel 5 star series in Charlotte. Chef Bajard has so much to offer and always has really great flavor combinations and balanced desserts. He has come up with some of the best tasting pastries I have ever tasted. I can't wait for this one. I also wanted to mention that The Pastry Profiles store is really beginning to build and has recently added a Facebook page. As promised here are the details with for the new PASTRY LIVE. We are calling it PASTRY LIVE 2.

The Two-Day Demo will explore the many techniques that go into the design and production of a chocolate showpiece. Chef Tréand will demonstrate chocolate showpiece techniques as well as his amazing chocolate air-brushing techniques that lead to the National and World Championship wins.

In the Hands on Class students will develop their chocolate showpiece skills under the guidance of Chef Treand. This is a great opportunity to work closely with a master. Class size is very limited.
