Pastry Profiles has been Quite busy lately. First we just got finished presenting Pastry Live 2 featuring Stephane Treand. It was a great event and we will talk much more about it later, but I have to mention that Chef Treand is one of the nicest chefs I have had the pleasure of working with, a super professional and really down to earth. We are looking forward to another class next year. We also had the pleasure to be at A demo with Nicholas Lodge Called the MASSA ROAD SHOW. Our Elisabeth Walker was there as an attendee and we posted her notes from the event. We have also posted a long awaited article on Michael Rechiutti, Chocolatier from San Francisco. Ellen Anderson was out at his shop and did an amazing interview. We also have posted results and some photos of the World Pastry Team Tryouts. Our summary of the Stephen Durfee Plated dessert class at the Pastry Forum Last summer has also been posted as well as one of his featured recipes. It was an awesome class. We are also posting a slide show from Pastry Live 2, with an article to follow. I hope you have a chance to take a look and enjoy our new features.

Chocolate Showpiece seminar

The Two-Day Demo will explore the many techniques that go into the design and production of a chocolate showpiece. Pastry Profiles is in the process of planning our next pastry chef interviews. In the past we have been lucky to gain access to some great pastry chefs who are willing to share philosophies and techniques. Our upcoming interviews will be no less exciting. stay tuned for more info on those interviews. On a personal note I will be attending a class on entremets with MOF Olivier Bajard at the Pre Gel 5 star series in Charlotte. Chef Bajard has so much to offer and always has really great flavor combinations and balanced desserts. He has come up with some of the best tasting pastries I have ever tasted. I can't wait for this one. I also wanted to mention that The Pastry Profiles store is really beginning to build and has recently added a Facebook page. Check out the Pastry Profiles Store's Facebook page and become a friend. It may even save you some money.

As promised here are the details with for the new PASTRY LIVE. We are calling it PASTRY LIVE 2.

The Two-Day Demo will explore the many techniques that go into the design and production of a chocolate showpiece. Chef Tréand will demonstrate chocolate showpiece techniques as well as his amazing chocolate air-brushing techniques that lead to the National and World Championship wins.

In the Hands on Class students will develop their chocolate showpiece skills under the guidance of Chef Treand. This is a great opportunity to work closely with a master. Class size is very limited.

Pastry Profiles is pleased to announce our next Pastry Live event. A chocolate showpiece seminar with Chef Stephane Treand MOF. This is a 2 day chocolate showpiece seminar taking place on March 21st and 22nd. There will also be a hands on class on Tuesday March 23rd. I will post more details soon.
